Cocktail Recipe: Kir Royale 2.0

This recipe puts a fun, molecular gastronomic twist on the traditional Kir Royale–a celebratory drink of Burgundian origin that combines champagne or sparkling wine with blackcurrant liqueur.

In this version, the liqueur is replaced by French flavor pearls that encapsulate a mildly sweet blackcurrant flavor within a thin, sodium alginate shell. The “pearls” of blackcurrant settle in at the bottom of your flute like small, purple-hued jewels, adding elegant flair to your glass.

Yield: 1 serving

1 tsp Blackcurrant Flavor Pearls
5 ounces champagne or sparkling wine, chilled

  1. Place Blackcurrant Flavor Pearls in the bottom of a champagne flute.
  2. Top with chilled champagne or sparkling wine.
